Shrimp Pho

This Shrimp Pho soup is warm and comforting, light yet filling.

Cook noodles

Cook rice noodles per package instructions, drain, and set aside. Heat oil in a pot over medium-high, add star anise and cinnamon stick, and toast for 2 minutes.

Simmer soup

Stir in ginger and garlic, sauté for 2 minutes. Add chicken stock, fish sauce, soy sauce, lemongrass, half the jalapeño slices, and shrimp shells. Simmer for 10-15 minutes.

Add shrimp

Strain spices and shells using a sieve. Return pot to heat, add bok choy and shrimp, and cook for 2 minutes. Remove from heat, stir in lime juice and cilantro.

Divide the noodles among the 4 bowls and pour the soup on top.
