Zucchini Boats

These Buffalo Chicken Zucchini Boats are not only delicious, but also packed with nutrients!

Cut zucchini

Preheat oven to 400 degrees. Cut the ends of each zucchini then cut them in half lengthwise.

Scoop out center

Using a spoon scoop out the center of the zucchini including the seeds.

Bake zucchini

Place zucchinis in the bottom of a casserole dish. Place in the oven and bake for 15 minutes.

Make filling

In a medium bowl combine cooked chicken, cream cheese, buffalo sauce, sour cream, green onions, garlic powder and onion powder.

Stuff zucchini boats

Remove from the oven and divide the chicken mixture between the zucchinis.

Bake

Top with shredded cheese and bake for 15 additional minutes.

Serve immediately with additional buffalo sauce and ranch dressing and enjoy!
