Breakfast Pita Pizza is a delicious take on classic pizza, featuring a toasted pita bread crust topped with breakfast-friendly ingredients for a hearty and satisfying breakfast!
Toast pitas: Preheat oven to BROIL.Place pitas directly on the oven rack and cook for 1-2 minutes on each side making sure to keep an eye on them so they don't get too golden brown.Remove them from the oven and preheat the oven to 400 degrees.
Cook eggs: Heat 1 tablespoon of butter in a medium skillet over medium high heat.Add in whisked eggs and scramble until almost cooked (I like to cook them about 80% of the way because they continue to cook in the oven)
Assemble pizza: Lay out the pitas on a baking sheet lined with parchment paper.Brush the remaining tablespoon of butter onto the toasted pitas.
Add Toppings: Top with cheese (1/3 cup for each pizza), bacon and eggs.
Cook pizza: Bake for 8-10 minutes or until golden brown. Top with fresh parsley and a sprinkle of salt and pepper and serve immediately!
