Granola Cookies
These granola cookies are like trail mix in cookie form! Packed with oats, peanut butter, nuts, seeds, and dried berries, they’re chewy, crunchy, and perfect for snacking.

Ingredients
1cupold fashioned oats
1tbspchia seeds
1tbspflax seeds
1tbsphemp seeds
1/2cupcreamy peanut butter
1/4cuppepitas
1/4cupdried cranberries
1/4cupdried blueberries
1/4cupchopped walnuts
1/3cupmaple syrup
Instructions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside.
Add all of the ingredients to a large bowl. Mix to combine.
Using slightly damp hands scoop heaping 1/4 cup size cookies onto baking sheet. You'll have to press down flatten and form the mounds into the shape of a cookie. You can fit all of the cookies on a baking sheet since they won't spread.
Bake for 12-14 minutes. Allow them to cool on the baking sheet. They will continue to cook on the baking sheet and firm / crisp up as they cool.
Serve as is or dip in chocolate and sprinkle with flakey sea salt if you're feeling fancy!
Notes
Chop mix-ins small. Smaller pieces of nuts help the cookies stick together better.
Use damp hands. The mixture can be sticky, so slightly damp hands make shaping the cookies much easier.
Press firmly. Pack and flatten the cookies well before baking so they hold together.
Don’t overbake. The cookies will continue to firm up as they cool on the baking sheet.
Cool completely. Let them rest on the pan so they set up and set properly.
