  • Old fashioned oats: The base of the cookies that gives them a chewy texture.
  • Seeds: I do a mixture of chia seeds, hemp seeds and flax seeds for protein, healthy fats and fiber!
  • Creamy peanut butter: Holds everything together and adds protein. I love a good peanut butter granola so why not do a granola cookie! Almond butter, cashew butter or sunflower seed butter will work well too.
  • Nuts: I use both pepitas and chopped walnuts for extra crunch!
  • Dried cranberries and blueberries: Brings a sweet-tart chewiness to every bite. Any dried fruit will work!
  • Maple syrup: Naturally sweetens the cookies and helps bind the mixture together.

How to Make Granola Cookies

  1. Prep and stir: Preheat oven to 350ºF. Line a baking sheet with parchment paper, set aside. Add all of the ingredients to a large bowl. Mix to combine.
  1. Form Cookies: Using slightly damp hands, scoop heaping 1/4-cup portions onto the baking sheet and press into cookie shapes.

  1. Bake: Place in the oven and bake for 12-14 minutes. Allow them to cool on the baking sheet. They will continue to set on the baking sheet and firm up as they cool.

    These granola cookies are like trail mix in cookie form! Packed with oats, peanut butter, nuts, seeds, and dried berries, they’re chewy, crunchy, and perfect for snacking.

    Serves 8 cookies

    Ingredients 

    • 1 cup old fashioned oats
    • 1 tbsp chia seeds
    • 1 tbsp flax seeds
    • 1 tbsp hemp seeds
    • 1/2 cup creamy peanut butter
    • 1/4 cup pepitas
    • 1/4 cup dried cranberries
    • 1/4 cup dried blueberries
    • 1/4 cup chopped walnuts
    • 1/3 cup maple syrup

    Instructions

    • Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside.
    • Add all of the ingredients to a large bowl. Mix to combine.
    • Using slightly damp hands scoop heaping 1/4 cup size cookies onto baking sheet. You'll have to press down flatten and form the mounds into the shape of a cookie. You can fit all of the cookies on a baking sheet since they won't spread.
    • Bake for 12-14 minutes. Allow them to cool on the baking sheet. They will continue to cook on the baking sheet and firm / crisp up as they cool.
    • Serve as is or dip in chocolate and sprinkle with flakey sea salt if you're feeling fancy!
