Place potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook until the potatoes are tender, about 15 minutes or so.
Meanwhile add bacon to a large skillet and cook until golden brown and crispy, 5-6 minutes. Remove the bacon from the pan and set aside.Leave the bacon grease in the pan.
Add the onion to the bacon grease and cook until browned 2-3 minutes.
Add in garlic and cook for an additional minute.
Turn off the heat and add in vinegar, mustard and the potatoes back to the pan.
