
Warm German Potato Salad
The BEST Warm German Potato Salad Recipe loaded with crispy bacon, tender baby potatoes, red onions, a tangy dressing and tons of fresh herbs! This hot german potato salad makes a great side dish to serve alongside Grilled Chicken Breast, Steak of Pork!
Ingredients
- 1 1/2 pounds baby potatoes, cut in half
- 1 small red onion, diced
- 6 slices bacon, diced
- 2 cloves garlic, minced
- 4 tbsp red wine vinegar
- 1 tbsp whole grain mustard
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tsp fresh dill
- 1 tsp fresh thyme
Instructions

Place potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook until the potatoes are tender, about 15 minutes or so.

Meanwhile add bacon to a large skillet and cook until golden brown and crispy, 5-6 minutes. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan.

Add the onion to the bacon grease and cook until browned 2-3 minutes.

Add in garlic and cook for an additional minute.

Turn off the heat and add in vinegar, mustard and the potatoes back to the pan.

Sprinkle with the fresh herbs and serve warm!
