Gluten-Free Turkey Gravy

- 2 cups leftover drippings from turkey, skimmed of fat, can add extra chicken stock to bring it up to 2 cups if needed
- leftover roasted vegetables from roasted turkey, can substitute sautéed vegetables if not roasting a turkey, see post for details
- salt and pepper
- 1 tsp fresh thyme
- 1 tbsp fresh parsley, chopped
Start by skimming the fat off of the turkey drippings. Note if you did not roast a turkey or save drippings simply substitute 2 cups chicken stock.
Add the roasted vegetables from the turkey and place into a blender.
Pulse for 1 minute or until the vegetables are smooth and all of the vegetables have been pureed. If you have a hard time pureeing the vegetables add 1-2 tablespoons of turkey drippings to the blender.
Add the turkey drippings, pureed veggies, thyme and parsley to a medium saucepan and whisk to combine. Bring to a simmer and cook until warmed through and thickened, 2-3 minutes. Season with salt and pepper to taste and serve immediately!
