Preheat oven to 350°F. Grease a 9x5-inch pan and set aside. In a large bowl, combine flour, cocoa powder, baking soda, salt, flax seed and instant coffee granules or espresso powder.

In a medium bowl, combine the brown sugar, eggs, vanilla, greek yogurt or sour cream until combined.

Next, add the wet ingredients into the dry ingredients. Mix together.

Transfer the batter to the greased pan and bake in the oven for 45 to 50 minutes. You can test it with a knife stuck in the center to see if it is done.
