These homemade English muffins are soft and fluffy on the inside and loaded with tons of nooks and crannies.
Microwave milk until warm, then add sugar, butter and salt, and mix to combine. Set mixture aside.
In another bowl mix in warm water, sugar and yeast. Let the mixture sit for 5 minutes to bloom.
Add flour to a large bowl, along with the milk and yeast mixture. Mix the batter just until combined, then cover the bowl with plastic wrap and let it rest for 30 minutes.
Dust the bottom of a cast iron pan generously with corn meal. Spray the inside of the rings with nonstick cooking spray and place on top of the cornmeal.
Using a 2 oz. scoop, transfer batter into rings. Cover the pan with a lid and turn stove to medium low heat. Cook about 7 minutes on both sides. Remove the rings then flip the muffins on the other side.
Serve these homemade English muffins with butter, jam, honey or scrambled eggs.
