Add achiote paste, orange juice, onion, garlic, oil, and seasonings to a blender.
Pulse the ingredients together until the mixture is smooth. This mixture will be the marinade for the chicken thighs.
Add the marinade and chicken to a ziplock bag and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat the grill to 425°F and spray it with nonstick cooking spray. Grill the chicken for 5-7 minutes on each side.
Remove the pollo asado from the grill and allow the chicken to rest for 5 minutes before slicing.
