Dipped in chocolate, these Lace Cookies are a treat that goes perfectly with a cup of tea or coffee!
Preheat the oven to 350F. Line two baking sheets with parchment paper. Add butter and brown sugar to a saucepan and melt it over medium heat, whisking occasionally.
Pour the butter/sugar mixture into a large bowl. Stir in the vanilla, oats, almond flour, salt and egg white. Mix to combine.
Portion heaping teaspoons (NOT tablespoons) onto the prepared baking sheets.
Bake for 6-8 minutes or until golden brown along the edges. Let them cool on the baking sheet for a couple minutes, before transferring them to a cooling rack to cool completely.
Add the chocolate chips and coconut oil to a microwave safe bowl. Cook for 40 seconds, stir and cook for an additional 20 seconds or until melted.
Dip the cookies into the chocolate mixture and sandwich another cookie on top of the chocolate to create a cookie sandwich.
Repeat with the remaining cookies and enjoy!
