The Best Lace Oatmeal Cookies Recipe
You would be surprised how easy these oatmeal lace cookies are to make, and just how many cookies you’ll end up with! The batter is super simple to whip up, and there is no chilling time required!
We want these cookies to spread thin in the oven, so that they will come out perfectly caramelized and crisp. To take things up a notch, I dipped them in butter to make lace sandwich cookies that are seriously to die for!
You’re whole family is going to love these sweet treats. Have them as a light and crunchy dessert, or as a pick-me-up with an afternoon cup of tea! They are also a fun addition to add to your Christmas cookie exchange!
Ingredients Needed
- Unsalted Butter: I like to use unsalted butter. If you have salted butter, add less salt to the mixture.
- Light Brown Sugar: The brown sugar adds a hint of caramel flavor to the cookies.
- Vanilla: For a little extra flavor!
- Oats: I like to use old fashioned oats or quick cooking oats because that is what I typically have on hand!
- Almond Flour: Adds a hint of nuttiness to the cookie. You can use store bought almond flour or make your own!
- Salt: To bring out all of the flavors!
- Egg White: Adds structure and helps the cookie to stay light and crispy!
- Chocolate Chips: I used semi-sweet chocolate chips but you can use any kind that you want! Milk chocolate or dark chocolate would work! This chocolate will be used to stick two cookies together for little cookie sandwiches with a layer of chocolate in the middle. If you would like to make more cookies you can simply drizzle chocolate onto each cookie or simply omit.
- Coconut Oil: This helps to create silky smooth melted chocolate.
How to Make lace oatmeal cookies
- Preheat: Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- Melt Butter: Add butter and brown sugar to a small saucepan and cook over medium heat, whisking occasionally until the butter is melted.
- Mix with Other Ingredients: Pour the butter/sugar mixture into a large bowl. Stir in the vanilla, oats, almond flour, salt and egg white. Mix to combine.
- Portion onto Sheets: Portion heaping teaspoons (NOT tablespoons) onto the prepared baking sheets.
- Bake: Bake for 6-8 minutes or until golden brown along the edges. Let them cool on the baking sheet for a couple minutes, before transferring them to a cooling rack to cool completely. The cookies will harden and crisp up as they cool.
- Melt the Chocolate: Add the chocolate chips and coconut oil to a microwave safe bowl. Cook for 40 seconds, stir and cook for an additional 20 seconds or until melted.
- Dip: Dip the cooled cookies one at a time into the chocolate mixture and sandwich another cookie on top of the chocolate to create a cookie sandwich with the chocolate in the center. Repeat with the remaining cookies and enjoy!

Why isn’t there a lot of flour in this cookie recipe?
You will notice that there isn’t a lot of flour in this recipe, and it’s for a good reason. Flour creates structure and mass, which is usually very important in cookie recipes. However, we want lace cookies to spread in the oven and get caramelized and crispy. So we just use a little bit of flour to create a little bit of structure, but not so much that we will have thick cookies!
How should I store lace cookies?
Store any leftover lace cookies in an airtight container at room temperature for up to 4-5 days. Or you can keep them in the fridge for up to one week. However, they won’t stay as crisp in the fridge!
My cookies aren’t crispy
The lace cookies will crisp as they cool. It’s important to let the cookie sit on the baking sheet when they are removed from the oven for at least 5 minutes and then transfer them to a cooling rack to cool completely. The cookies are very delicate when they are warm so it’s important to allow them to cool before dipping them in the chocolate.
