This Thai Basil Chicken Stir Fry is loaded with tons of fresh vegetables.
Add chicken breast, soy sauce, sesame oil and cornstarch to a medium bowl. Toss to coat the chicken in the sauce and let it marinate for 10 minutes.
Heat 1 tbsp of oil in a skillet over high heat. Add the chicken to the pan in batches and cook for 2-3 minutes on each side.
Remove the chicken from the pan and set aside.
Add the remaining tbsp of oil to the same skillet. Add in the bell peppers and sauté for 2-3 minutes. Stir in the ginger, garlic and white parts of the green onion. Cook for 2 minutes.
Stir in the dark soy sauce, regular soy sauce, honey and water to the skillet. Add the chicken back to the pan and toss to coat in the sauce. Simmer for 1-2 minutes then remove from the heat.
Stir in the thai basil and serve with sesame seeds and green onions!
