Prepare the cucumbers by finely mincing or grating them on a cutting board. English cucumbers are best for tzatziki.

Add the yogurt, cucumbers, garlic, lemon juice and dill to a medium bowl. Whisk to combine and season with salt and pepper.
Serve immediately with a drizzle of extra virgin olive oil on top. Or refrigerate the sauce for up to 4 days in the refrigerator until you are ready to eat!
