These French Dip Sandwiches are perfect for an easy make-ahead meal!

Season chuck roast with salt and pepper on both sides. Heat olive oil in a cast iron skillet over high heat. Add in the chuck roast and sear on both sides until golden brown.

Transfer the roast to the slow cooker. Deglaze the pan with broth, then pour it into the slow cooker with Worcestershire sauce and seasonings. Cook on low for 6-8 hours.

Remove roast from the slow cooker and slice or use forks and shred.

Layer the beef on top of French bread and top with two slices of provolone cheese or American cheese. Place sandwiches under the broiler until the cheese is melted.
Serve warm with a side of au jus!
