Broccoli Cheddar Tots are a delicious and nutritious snack made from finely chopped broccoli mixed with plenty of cheese and baked until crispy!
Bring a large pot of water to a boil. Add in broccoli and cook for 2-3 minutes.
Remove the broccoli from the water with a slotted spoon and transfer to a bowl filled with ice water.
Drain then transfer the broccoli to a cutting board. Make sure the broccoli is dried off then chop up the broccoli into small pieces.
Preheat oven to 400F. Line a a baking sheet with parchment paper. Add broccoli to a bowl along with cheddar cheese, parmesan, seasonings, panko and egg.
Portion into tater tot shapes and place on the prepared baking sheet. (I find the tighter you pack the tater tots the better they stay together)
Bake for 20-25 minutes flipping halfway or until they are golden brown and crispy.
Serve immediately with your favorite dipping sauce! Ketchup is our favorite!
