The Best Broccoli Cheddar Tots Recipe
Don’t get me wrong, I love regular tater tots just as much as the next gal! But these healthier broccoli cheddar tots are the absolute best replacement! They are perfectly cheesy and crunchy with the added benefit of having veggies in them.
With just a little bit of prep work, you can make these homemade vegetable tots in no time.
You can use these healthy broccoli cheddar tots as a side dish with anything you would serve regular tater tots with! Or, they are a wonderful after school snack for the kiddos. No matter how you choose to serve your homemade tots, they are sure to be a hit with the whole family!
Ingredients Needed
- Broccoli: Broccoli makes up most of these broccoli cheddar tots, making them packed with fiber and nutrients!
- Cheddar Cheese: Use a sharp cheddar cheese here.
- Parmesan Cheese: Parmesan cheese adds some extra flavor!
- Garlic Powder & Onion Powder: Add a bit of both garlic powder and onion powder to add a depth of savory flavor!
- Salt & Pepper: To taste.
- Panko Breadcrumbs: Panko breadcrumbs will add a bit more structure to these veggie tots!
- Egg: Egg will bring the mixture together and also provide more structure!
How to Make broccoli cheddar tots
- Boil Broccoli: Bring a large pot of water to a boil. Add in broccoli and cook for 2-3 minutes.
- Chill: Remove the broccoli from the water with a slotted spoon and transfer to a bowl filled with ice water.
- Dry & Chop: Drain the broccoli and then transfer to a cutting board. Make sure the broccoli is dried off (I did this by blotting it with some paper towels). Chop up the broccoli into small pieces.
- Preheat & Mix Ingredients: Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Add chopped broccoli to a large bowl with cheddar cheese, parmesan cheese, seasonings, panko and egg.
- Shape: Portion into tater tot shapes and place on the prepared baking sheet. I find the tighter you pack the tater tots, the better they stay together.
- Bake: Bake for 20-25 minutes, flipping halfway through or until they are golden brown and crispy.
- Serve: Serve immediately with your favorite dipping sauces! Ketchup is our favorite!
Tips for success
- Chop the broccoli into fine pieces! Make sure you don’t have any large chunks in there. You can have some small chunks, but mostly fine pieces will help when creating the tater tot shapes!
- For best results, use freshly grated cheddar cheese right off the block. The cheese will mix more seamlessly into the tots that way!
- Serve your tots with all your favorite dipping sauces like ketchup, ranch, spicy mayo, or avocado crema!
