This quick and easy Chicken Broccoli Rice Skillet is perfect for busy weeknights!
Heat olive oil in a large skillet over medium high heat. Add in onions and sauté for 4 minutes or until the onions start to get some color on them.
Add in the chicken and saute for 5 minutes (the chicken will not be all the way cooked that's ok).
Add in the butter and once melted stir in the rice and garlic. Toast for 1-2 minutes.
Pour in the chicken broth and milk cover and simmer for 12 minutes.
Stir in the broccoli, cover and simmer for another 6 minutes or until the broccoli and rice are tender. Stir in the parmesan cheese and season with salt and peppeRR.
Serve immediately and enjoy!
