The Best One Pan Chicken Broccoli Skillet
I absolutely love everything about this chicken broccoli rice skillet! It is cheesy, comforting, and so easy to make. Plus, you can make it all in one pan! This is just the kind of dinner that is perfect to make on busy weeknights.
Since the rice is cooked in the skillet along with everything, you will get the perfect creamy texture from the starches of the rice. Plus, this skillet has everything you need in a meal. It is high in protein thanks to the chicken and high in nutrients thanks to the broccoli! Even the pickiest of eaters are going to love this family favorite.
Ingredients Needed
- Onion: White or yellow onion works well here and start to build up flavor!
- Chicken Thighs: I like using skinless, boneless chicken thighs but you can also use chicken breast here! Dice them up into bite-sized pieces. To make this recipe even quicker use leftover rotisserie chicken!
- Butter: A little bit of butter helps to toast up the rice!
- Rice: I used white rice. If you want to use anything other than white rice, make sure you use the right ratio of liquid! Brown rice will need more liquid and time to cook through.
- Garlic: For a depth of flavor!
- Chicken Broth: Cooking everything in chicken broth adds extra flavor. You can also opt for vegetable broth, or water with some salt.
- Whole Milk: For a bit of creaminess!
- Broccoli: I like using fresh broccoli, but you can also use frozen broccoli if preferred. Frozen will not take as long to cook!
- Parmesan Cheese: Top it off with parmesan cheese before serving.
- Salt & Pepper: To taste!
How to Make This cheesy broccoli rice skillet
- Sauté Onions: Heat olive oil in a large skillet over medium high heat. Add in onions and sauté for 4 minutes or until the onions start to get some color on them.
- Cook Chicken: Add in the chicken and sauté for 5 minutes (the chicken will not be all the way cooked, that is okay!)
- Add Rice: Add in the butter and once melted, stir in the rice and garlic. Toast for 1-2 minutes.
- Add Liquid: Pour in the chicken broth and milk and cover and simmer for 12 minutes.
- Add Broccoli: Stir in the broccoli, cover and simmer for another 6 minutes or until the broccoli and rice are tender. Stir in the parmesan cheese and season with salt and pepper to taste. Serve immediately and enjoy!

- For an extra cheesy chicken broccoli rice skillet, you can add some extra sharp cheddar cheese to the mix!
- For ease, you can use rotisserie chicken instead of raw chicken! Just don’t add it at the same time in the recipe. Add it when you add the broccoli!
- Add extra vegetables! You can add in even more vegetables like mushrooms, bell peppers, carrots, or peas!
- This casserole is a balanced meal on its own, but if you are feeding a crowd, you can serve it with a side of garlic bread or a fresh salad!

- 2 cups chicken broth
- 1 cup whole milk
- 4 cups broccoli, cut into florets
- 1/2 cup parmesan cheese
- salt and pepper, to taste
