Corn Muffins

This delicious and easy Corn Muffins recipe is a great way to make cornbread in a easy-to-grab way.

BROWN BUTTER

Preheat the oven to 400°F. Grease a muffin tin with non-stick spray. In a saucepan, cook butter over medium heat until light brown (5-10 mins). Set aside and let the butter cool.

MIX DRY INGREDIENTS

 In a bowl whisk together the flour, cornmeal, baking powder, baking soda and salt.

MIX WET INGREDIENTS

In a medium bowl combine honey, buttermilk, eggs and cooled brown butter.

MAKE BATTER

Add the wet ingredients to the dry ingredients and mix until just combined (do not over mix).

DIVIDE BATTER

Divide the batter between the muffin tin and bake for 12-15 minutes or until golden brown and set.

COOL

Allow to cool for 5-10 minutes in the muffin tin before transferring them to a plate or cooling rack. 

Serve warm with butter and or honey. Enjoy!
