Corned Beef Hash

Not sure what to do with leftover Corned Beef? Then make my Corned Beef Hash!

COOK POTATOES

Preheat oven to 500F, place the rack at the bottom of the oven, and grease a baking sheet with cooking spray. Add 10 cups of water in a pot, once boiling add baking soda and potatoes, and boil for 1 minute.

SEASON POTATOES

Drain potatoes, and return them to the pan along with butter, olive oil, onion powder, garlic powder, salt, pepper, and paprika. Toss to coat and spread them on the prepared pan.

BAKE

Bake for 15 minutes on the bottom oven rack. Stir and bake for an additional 15 minutes or until perfectly crisp and golden brown. Set aside.

SAUTE ONION

Heat butter and olive oil in a large skillet over medium high heat. Add in onion and saute for 3-4 minutes. Stir in garlic and cook for an additional minute.

ADD BEEF

Add cooked potatoes and corned beef to the pan. Flatten the mixture with a spoon or spatula. Cook undisturbed for 2-3 minutes, then flip and cook the other side.

Season with salt and pepper to taste and serve immediately with fried eggs!
