Gnocchi Soup

This Italian Gnocchi Soup is made with kale and spicy sausage.

COOK SAUSAGE

Heat olive oil in a pot, add in the onion and sauté for 3-4 minutes . Add in garlic and cook for an additional minute. Add in the sausage and cook it until it’s cooked through and brown.

SIMMER

Drain excess grease and add the onion and garlic back to the pot. Then add in the broth and tomatoes, plus the bay leaf. Bring to a simmer and cook for 10 minutes.

ADD GNOCCHI

Add in gnocchi and cook until it floats to the top, 2-3 minutes. Stir in spinach and kale and cook for an additional 1-2 minutes. Season with salt, pepper, crushed red pepper flakes, and Italian seasoning.

Serve with some crusty bread on the side!
