Lace Oatmeal Cookies

These lace cookies are a treat that goes perfectly with a cup of tea or coffee!

Melt butter & sugar

Preheat the oven to 350F. Line two baking sheets with parchment paper. Add butter and brown sugar to a saucepan and cook over medium heat, whisking occasionally.

Add dry ingredients

Pour the butter/sugar mixture into a large bowl. Stir in the vanilla, oats, almond flour, salt and egg white. Mix to combine.

Portion cookies

Portion heaping teaspoons (NOT tablespoons) onto the prepared baking sheets.

Bake

Bake for 6-8 minutes or until golden brown along the edges. Let them cool on the baking sheet for a couple minutes, before transferring them to a cooling rack.

Melt chocolate

Add the chocolate chips and coconut oil to a microwave safe bowl. Cook for 40 seconds, stir and cook for an additional 20 seconds or until melted.

Sandwich cookies

Dip the cookies into the chocolate mixture and sandwich another cookie on top of the chocolate. Repeat with the remaining cookies.
