These Walnut Chocolate Chip Cookies are super thick and fluffy.
Preheat oven to 400F. Line baking sheets with parchment paper. In a stand mixer fitted with the paddle attachment cream butter, light brown sugar and granulated sugar for 3-4 minutes.
Add in the eggs one at a time and vanilla.
In a medium bowl combine the flour, cornstarch, salt and baking soda. Add to the stand mixer and mix just until combined to avoid over mixing the dough.
Using a rubber spatula fold in the chocolate chips and walnuts.
Portion out cookie dough using a large cookie scoop (about 3 tablespoons each, these will be BIG cookies). Bake for 8-10 minutes or until the cookies look set.
Allow the cookies to continue cooking on the baking sheet for 5 minutes then transfer them to a cooling rack to cool completely.
