White Chocolate Oat Cups

These White Chocolate Oat Cups are have a rich and sweet flavor of white chocolate with a crunchy, nutty oat mixture and tangy raspberry jam!

Make oat mixture

In a medium bowl combine oats, honey, peanut butter and vanilla.

Divide the mixture

Spray a muffin tin with cooking spray. Divide the mixture evenly between the muffin tin pressing the mixture down slightly in the center to create a well.

Add jam

Add about a teaspoon of jam into each muffin tin.

Melt chocolate

Add the white chocolate chips and coconut oil to a small bowl. Microwave in 30 second increments until melted.

Spread chocolate

Spoon the melted chocolate on top of each oat cup and use the back of the spoon to spread the chocolate.

Freeze

Top each muffin cup with a raspberry while the chocolate is still wet. Place in the the fridge or freezer for 30 minutes or until the chocolate on top is hardened.

Store leftovers in the fridge for up to a week or in the freezer for up to 3 months!
