Ingredients
Mexican Salmon Salad
1tbspextra virgin olive oil
2salmon filets
2cupsspring mix
6slicesjalapeno
1/4cupred onion, diced
1/4cupblack beans, drained and rinsed
1/4cupcherry tomatoes
1/4corn
2tbspcotija cheese
Honey Jalapeno Dressing, for serving
Mexican Spice Rub
1/2tsppaprika
1/4tspgarlic powder
1/4tsponion powder
1/4tsporegano
1/4tspcumin
1/4tspsalt
1/8tsppepper
Instructions
Mexican Salmon Salad
Heat olive oil in a skillet over medium high heat. Season salmon with Mexican Spice Rub. Add salmon skin side down.
Cook for 3-4 minutes on each side.
To assemble the salad divide the spring mix between two bowls then top with the cooked salmon, jalapeno, red onion, black beans, tomatoes, corn and cheese.
Drizzle with the Honey Jalapeno Dressing.
Mexican Spice Rub
Combine all of the ingredients together in a small bowl. Set aside.
