Shrimp Pho

Making Shrimp Pho at home is a lot easier to make than you think!

COOK RICE NOODLES

Cook rice noodles according to package instructions. Drain and set aside.

BLOOM SPICES

Add oil to a pot over medium-high heat. Add the star anise and cinnamon stick. Toast the spices for 2 minutes. Add ginger and garlic and saute for another 2 minutes.

SIMMER

Pour in chicken stock, fish sauce, soy sauce, lemongrass, half of the sliced jalapeno, and shrimp shells to the pot. Simmer for 10-15 minutes. Strain out the spices and the shells using a metal sieve.

SIMMER

Place the pot back on the stove and stir in the bok choy and shrimp. Cook for 2 minutes or until the shrimp turns a light pink. Take off the heat and stir in the lime juice and cilantro.

Garnish with more cilantro and the remaining jalapeno!
