- Don’t overcrowd the pan. Sear the shrimp in a single layer so that they cook evenly and turn a nice golden color.
- Deglaze like a pro. Make sure you scrape all the brown bits off the bottom of the pan when you add the wine—that’s where all the flavor lives!
- Don’t forget the fresh herbs! They add pops of flavor and help to break up the heaviness from he cream.
Ingredients
- Fresh shrimp – I always like to use raw shrimp (not pre-cooked!) so that they stay juicy and tender.
- Butter – Adds a rich, silky flavor. I love how it helps the Cajun spices bloom, too.
- Cajun seasoning – You can use a store-bought blend or make your own homemade Cajun seasoning!
- White wine – A little splash of wine is a must for deglazing the pan. It adds depth and brings out all those yummy browned bits from the shrimp.
- Heavy cream – Makes the sauce super creamy.
- Tomatoes – Adds a little acidity to the dish to help offset the heaviness of the cream. I usually use fresh tomatoes, but canned diced tomatoes also work in a pinch!
- Garlic – Adds a bit of a savory kick that pairs perfectly with the Cajun flavors.
- Fresh Herbs – I like to sprinkle scallions and fresh chopped parsley on top for a pretty pop of color!
How to Make Creamy Cajun Shrimp
- Cook the Shrimp: Heat the skillet over medium-high heat and add butter. Once melted, add in the shrimp and the Cajun seasonings. Cook for 1-2 minutes, flip, then cook for an additional minute or until the shrimp turns pink and is no longer opaque.
- Add Garlic and Tomatoes: Remove the shrimp from the pan and set aside. Add garlic and tomatoes and sauté for about 2 minutes.
- Simmer and Coat: Deglaze the pan with white wine, making sure to scrape the brown bits, “fond,” off the bottom of the pan. This is where all the flavor is! Add in the cream, then bring to a simmer. Cook for 2 minutes, stirring frequently, or until the sauce is thickened. It should be able to coat the back of a spoon. Add the shrimp back to the pan and toss to coat in the sauce.
- Serve: Serve immediately over rice and garnish with fresh herbs. Enjoy!
