    The Best Cucumber Mint Lemonade REcipe

    Fruity, earthy and flavorful, this cucumber mint lemonade is so refreshing and absolutely delicious! It might not seem like it, but this mint cucumber lemonade is actually pretty healthy for you! It is full of healthy ingredients and just a hint of natural sweetener in the honey.

    I got the idea for cucumber mint lemonade after trying it at CAVA. This tastes just like the restaurant version but better because it’s homemade!

    It is just as easy to make this cucumber mint lemonade as it is to make regular lemonade, so I definitely recommend giving it a shot! There is not way that it won’t be a major hit. The combination of refreshing flavors with a hint of bubbly water will have you coming back for more!

    Ingredients Needed

    • Cucumber: I used English cucumber here, so there was no need to peel it. If you use regular cucumber, peel it first before adding it to the blender.
    • Mint: Fresh mint adds so much fresh flavor here!
    • Honey: For just a hint of sweetness.
    • Lemon & Lime Juice: You can use bottled lemon juice and lime juice, or go for fresh! I personally love the taste of freshly squeezed lemon and lime juices, but it is a little extra work.
    • Water: Simply add some water here to make it into a juice.
    • Sparkling Water: Top it off with sparkling water before serving!

    How to Make cucumber mint lemonade

    1. Add Ingredients to Blender: Add cucumber, mint, honey, lemon juice, lime juice and 2 cups of water to a high powered blender.
    1. Blend: Starting on low, blend then work your way up to high. Blend for 30-60 seconds or until the cucumber and mint are all pulsed up.

    1. Strain: Using a sieve, strain out the remaining chunks/pulp.

    1. Add Sparkling Water: Add the liquid to a large pitcher and top with the sparkling water. you can also top each glass of lemonade off with sparkling water just before serving.
    2. Garnish & Serve: Garnish with some cucumber slices and a couple sprigs of mint! Enjoy!

    Tips for Success

    • If you don’t have a blender, you can use a food processor instead! However, it will be chunkier, so definitely strain out the chunks.
    • Adjust according to your taste! Taste the lemonade and adjust the sweetness as needed by adding more honey.
    • You can replace the honey with agave syrup, or even sugar if desired!

    Yes! Cucumbers are a healthy addition to this lemonade. Even though you are straining out some of the cucumber, you will gain some of the health benefits from the vitamins present in cucumbers such as vitamin K, vitamin C, potassium and magnesium! They are also a lovely antioxidant!

    Can I make this mint lemonade ahead of time?

    Absolutely! You can make this If making ahead of time, simply refrigerate the lemonade in a pitcher after blending and straining. Once you are ready to serve, give it a good stir, add the sparkling water to the pitcher and serve! Or, add sparking water to each glass as you serve it!
