Ingredients Needed
- Old-Fashioned Oats: Oats provide the base for these cookies, giving them a hearty, chewy texture. Old fashioned oats work best, as they hold up well during baking and provide a nice chew.
- Pumpkin Puree: Pumpkin puree adds moisture and flavor here. Be sure to use pure pumpkin puree, not pumpkin pie filling!
- Pumpkin Pie Spice: This blend of cinnamon, nutmeg, ginger, and cloves infuses the cookies with warm, aromatic flavors.
- Maple Syrup: Maple syrup naturally sweetens the cookies and adds a hint of rich, caramel-like flavor. It’s a great alternative to refined sugar, keeping the cookies on the healthier side.
- Chocolate Chips: For just a hint of added sweetness! Feel free to just dark chocolate or semi sweet chocolate chips!
How to Make healthy Pumpkin Cookies
- Combine Ingredients: Add the oats, pumpkin, cinnamon, maple syrup and chocolate chips to a large bowl. Mix to combine.
- Place on Baking Sheet: Portion out large tablespoon size cookies and place on the prepared baking sheet.

Tips for Success
- Customize to your taste! Feel free to add extras like chopped nuts, dried cranberries, or a drizzle of almond butter on top. You can also adjust the amount of pumpkin pie spice to suit your flavor preference.
- If you don’t have pumpkin pie spice, you can make your own by mixing cinnamon, nutmeg, ginger, and cloves and adding it to the pumpkin chocolate chip cookie batter!
- To store, place in an airtight container at room temperature for up to 3 days. For longer storage, keep them in the fridge for up to 1 week or freeze them for up to 3 months.
