I know I am not the only one out there absolutely obsessed with carrot cake, right? But sometimes I want a delicious carrot cake treat without all that sugar and cream cheese frosting!
So I came up with these. No bake, easy to make carrot cake energy balls. They are seriously going to be your new favorite treat! These are loaded with fiber, protein, and all the good fats to help you stay full for longer and keep you energized throughout the day!
Energy balls are an easy to make breakfast, snack or dessert that I love to make at the beginning of the week and keep on hand for when I need them! Plus, the whole family is going to actually love this carrot cake inspired version.
Ingredients Needed
- Oats: Regular, old-fashioned oats work best here! You can use quick oats, but the texture will be slightly different.
- Shredded Carrots: The best option here is to shred your own carrots! Pre-shredded carrots are just too big and won’t roll nicely into a ball. I like to use a food processor because it’s the quickest but you could also use a grater.
- Raisins: I love to add raisins here since I also like raisins in my carrot cake! This is optional.
- Walnuts: Definitely add chopped walnuts or pecans here. Not only do they add protein and nutrients, but also a lovely flavor and texture.
- Cinnamon: Cinnamon is a warming spice that is commonly used in carrot cake!
- Creamy Nut Butter: You can use any nut butter of your choice, just make sure it is creamy! This will help the balls to stick together and adds extra protein and fat to make sure you get lots of energy from your carrot cake energy balls.
- Vanilla: For added flavor.
- Maple Syrup: For a hint of natural sweetness!
How to Make carrot cake energy balls
- Shred the Carrots: Shred the carrots in a food processor or with a grater.
- Combine Ingredients: Combine all of the ingredients: carrots, oats, raisins, walnuts, cinnamon, nut butter, vanilla, and maple syrup to a large bowl.
- Mix: Toss to combine then refrigerate for 30 minutes. This makes them much easier to roll!
- Make into balls: Roll into balls. I got about 12 balls with this amount of mixture.
- Chill: Store in the fridge in an airtight container for up to a week! Eat whenever you need a healthy sweet treat or easy breakfast!

Can I make carrot cake energy bars instead?
Absolutely! If you prefer, you can add the mixture to a square baking dish lined with parchment paper and press it down into the bottom of the dish. Refrigerate and then cut them into no-bake granola bars!

Definitely! Feel free to freeze them if you don’t plan on eating them within one week. They will stay good in the freezer for up to 3 months!
