Before you get started / Kelley’s tips

    • Blend the mixture until smooth. Make sure the cottage cheese, egg whites, and seasonings are blended until smooth and creamy. This helps create the best texture for your flatbread.
    • Bake until golden. Keep an eye on the edges of the flatbread while baking. You want it to be a nice golden brown for the best texture and flavor. If the edges start to darken too quickly, reduce the heat slightly.
    • Let it cool completely. The flatbread needs to cool completely before being used as a wrap. This will help it firm up and hold its shape better when you add the fillings.

    Ingredients

    • Whole milk cottage cheese – This is the star ingredient of the recipe! It adds creaminess, protein, and a slight tang while keeping the flatbread soft and pliable. I always use whole milk cottage cheese because it gives the flatbread the best texture and flavor.
    • Egg whites – Helps bind everything together and gives the flatbread structure.
    • Seasonings – Garlic powder, onion powder, Italian seasoning, salt and pepper are added.

    Serving Suggestions

This cottage cheese flatbread is a versatile and delicious option for any meal! It makes the perfect wrap for a turkey and avocado sandwich or a breakfast wrap filled with eggs, bacon, and spinach. For a lighter option, try it with Roasted Garlic Hummus, sliced cucumbers, and roasted red peppers. If you’re craving something warm and comforting, use it as a base for a personal flatbread pizza—just add marinara, cheese, and your favorite toppings before toasting it in the oven.

For a fun twist, cut it into strips and dip it into Tzatziki, Guacamole, or even a bit of honey for a sweet-savory snack!

    Frequently Asked Questions

Can I use low-fat or fat-free cottage cheese?

Yes, you can. But I still recommend using whole milk cottage cheese for the best texture and flavor. Low-fat versions can make the flatbread a bit drier.

Do I need to drain the cottage cheese?

Nope, there’s no need to drain it! Blending the cottage cheese with the extra liquid will help create the perfect texture of flatbread. Just make sure to stir the cottage cheese really well before measuring. I find that a lot of the liquid sits at the top.

Can I use whole eggs instead of egg whites?

I recommend making this will egg whites versus whole eggs. Whole eggs add more moisture and that’s not what we want for a crispy flatbread. Also the egg yolk adds a more “eggy” taste to the flatbread that I’m not a fan of.

    How do I store leftovers?

Store the flatbread in an airtight container in the fridge for up to 3 days. You can also freeze them with parchment paper between each piece for easy reheating.
