The Best Frozen Cottage Cheese Bark
This easy frozen cottage cheese bark is one of my new favorite treats! Not only is it high in protein, but it is high in flavor and perfect to keep in the freezer for warm days! It literally tastes like a snickers bar!
Especially during the summer, I love making no-bake desserts and snacks that are a hit among adults and kids alike. This frozen cottage cheese bark is super easy to whip up, and versatile depending on your preferences.
Get the kids involved in the process by having them drizzle the chocolate on top and add their favorite fruits to their own corner of the bark!
Ingredients Needed
- Cottage Cheese: Use full fat cottage cheese for the creamiest flavor! You can use any kind of cottage cheese, but low fat cottage cheese will have less flavor and won’t be as creamy.
- Honey: Honey is a wonderful natural sweetener. You can substitute honey for maple syrup or agave syrup if desired!
- Vanilla: For added flavor.
- Creamy Peanut Butter: Creamy peanut butter adds extra protein and flavor. You can use any nut butter you’d like!
- Chocolate Chips: I melted my chocolate chips to make a chocolate drizzle on top of the bark.
- Chopped Nuts: Add some chopped nuts for texture! I like to use chopped walnuts and pecans. You could also use peanuts, almonds or cashews if preferred!
- Toppings: Some optional toppings include coconut granola, fresh fruit, drizzled peanut butter or drizzled white chocolate! You can add as many toppings as you’d like.
How to Make frozen cottage cheese bark
- Combine Ingredients: Add cottage cheese, honey, vanilla, and peanut butter to a high powered blender or food processor.
- Blend: Blend until the mixture is smooth and creamy.
- Spread on Baking Sheet: Pour the cottage cheese mixture onto a baking sheet. Spread into an even 1/4 inch layer. Drizzle with melted chocolate and chopped nuts, and any additional toppings you’d like on top!
- Freeze: Freeze for 1-2 hours or until it’s firmed up. Cut into squares and serve! I usually let mine sit at room temperature for 5 minutes before eating. Enjoy!
Recipe Variations
- Add Fruit: I love adding fresh fruit to my frozen bark for a pop of freshness! Try adding sliced strawberries, blackberries, blueberries or bananas!
- Skip the Nut Butter: If you don’t want a nutty tasting bark, you can totally skip the nut butter. For added protein, try adding a scoop of your favorite protein powder instead!
- Topping Options: You can go crazy with your toppings! Try adding shredded coconut, different flavors of chocolate chips, or swirls of jam!
