The Best Chicken Salad Recipe
Instead of making a traditional chicken salad with mayo, I have started making Greek yogurt chicken salad! It is creamier and richer, with fewer calories and higher protein! Whether you aren’t a fan of mayonnaise, or you have an egg allergy, this Greek yogurt chicken salad is a delicious option! You would never know this is made with yogurt! My husband was so surprised.
Since we use Greek yogurt here, this recipe is low in fat and high in protein. It has a wide array of flavors and textures thanks to the different vegetables added and the fresh grapes! The best part is that it is super filling, and can be made in no time!
Ingredients Needed
- Shredded Chicken: For chicken salad, you will need shredded, cooked chicken! This is a great opportunity to use leftover chicken or rotisserie chicken!
- Celery: Diced celery adds the perfect crunchy texture!
- Red Onion: I like to add red onion to my chicken salad for added flavor. If you don’t love the flavor of red onion, you can add diced shallots or green onions instead!
- Dijon Mustard: Use a high quality dijon mustard!
- Lemon Juice: For a tangy, bright flavor.
- Honey: Honey balances out all of the flavors here and adds a touch of sweetness.
- Dried Dill: Dried or fresh dill will both work well here. Whatever you have on hand!
- Greek Yogurt: Plain Greek yogurt adds a creamy texture without adding too many calories! I prefer to use Greek yogurt over mayonnaise. You would never know there is yogurt in this!
- Grapes: Seedless, red grapes are best. The crunchy texture and bright flavor are amazing here!
- Salt & Pepper: To taste.
- Additional Add In’s: If you’d like, you can add in additional ingredients like chopped nuts or poppy seeds!
How to Make greek yogurt chicken salad
- Combine Ingredients: Add all of the ingredients to a large bowl.
- Toss to Combine: Toss to combine then season with salt and pepper to taste.
- Serve: Serve as a melt, with bread on salad or as a lettuce wrap! Enjoy!
Tips for Success
- Make it ahead! This salad gets better after it is chilled for a few hours so that all the flavors can develop. You can make it ahead in the morning, allow it to chill in the fridge, and then serve for lunch with lettuce cups or croissants!
- If you don’t have rotisserie or leftover chicken on hand, you can cook chicken breast in the air fryer or instant pot for quick and delicious shredded chicken!
- Greek yogurt chicken salad tastes best when made with full fat Greek yogurt! The fat in the yogurt balances out the tanginess and will create the creamiest and most flavorful salad. If you use low or non fat yogurt, add a dash of olive oil to the mix to a bit of added fat to balance out the flavors!
