The Best Sloppy Joe Stuffed Sweet Potatoes Recipe

Sloppy joe stuffed sweet potatoes are a simple nutritious dinner idea that your family is going to love! While I love classic sloppy joes, sometimes I like to switch it up and use the flavorful filling on sweet potatoes or russet potatoes instead! The result is a nutritious, filling, and comforting meal that can be made in no time.

Plus, this recipe is easy to prepare! While the sweet potatoes are baking in the oven, you can whip up the sloppy joe filling on the stovetop!

    Ingredients Needed

    • Sweet Potatoes: These serve as the perfect base, adding a natural sweetness and nutritional boost to the dish. Alternatively, you can use russet potatoes instead!
    • Ground Beef: Opt for lean ground beef for a healthier version. Ground turkey or chicken can be used as a lighter alternative, although the sauce won’t taste as rich.
    • Bell Peppers and Onions: These veggies add a layer of texture and flavor, contributing to the overall heartiness of the filling.
    • Tomato Sauce and Ketchup: For a saucy, tangy sloppy joe filling!
    • Worcestershire Sauce & Apple Cider Vinegar: Essential for that savory, tangy balance in traditional sloppy joe flavors.
    • Brown Sugar: Gives the sloppy joes a hint of sweetness. I recommend to add brown sugar to taste.
    • Seasonings: I used dried mustard powder, salt, and freshly ground black pepper to season up the filling!

    Tips for Success

    • Bake sweet potatoes until fork tender! Make sure the sweet potatoes are fully cooked and tender before adding the sloppy joe filling. You should be able to easily pierce them with a fork.
    • Make each component ahead of time for meal prep! These sloppy joe stuffed sweet potatoes are perfect for weekly meal prep. Just prepare the sweet potatoes and sloppy joe filling separately and store in the fridge until ready to heat up and assemble!
    • Add some spice! If you like your food to have a bit of spice, serve with your favorite hot sauce on top.

    Serving Suggestions

These sloppy joe stuffed sweet potatoes are a meal on their own, but you can also serve them with a side of black bean corn salsa and chips, or some roasted cauliflower on the side to complete the meal. They make for a perfect dinner on busy weeknights or even as a meal prep option for the week ahead.

Top them with chopped green onions for a fresh crunch, or add shredded cheese for an extra layer of indulgence!

You can really load these stuffed sweet potatoes it you’d like! Shredded cheese, sour cream, jalapeños, or a sprinkle of chili flakes for added heat are all great toppings to enhance the dish.
