The best Avocado Baked Eggs Recipe
Don’t knock it before you try it! I know that baked avocados might sound odd, but these baked eggs in avocado are perfectly creamy and delicious, and full of healthy fats and protein!
The air fryer is the easiest and most convenient way to make these baked avocado eggs. You can cook them longer if you prefer a set yolk, but we cooked ours for about 4-5 minutes to set the egg white and have a runny yolk!
Served with crunchy bacon bits, crumbled feta, and chopped green onions, these avocado boats have the perfect combination of textures, flavors and nutrients! You can serve with some toast to dip in it, too!
Ingredients Needed
- Avocado: Just one avocado is perfect for one serving! You can double the recipe for two people of course.
- Eggs: You can either use just the egg yolks, or scoop out some of the avocado flesh and use the whole egg. Serve the scooped avocado on the side.
- Feta: Sprinkle with feta or your favorite cheese after baking!
- Bacon: I like to add crispy, crumbled bacon on top of my baked eggs in avocado.
- Green Onion: For added flavor, sprinkle on some green onions or chopped chives!
- Salt & Pepper: To taste.
How to Make baked eggs in avocado
- Preheat & Prep: Preheat air fryer to 400 degrees. Cut the avocado in half and remove the pit. If you would prefer to use the whole egg then scoop some of the avocado flesh. You don’t have to do this if you are using egg yolks only!
- Add Eggs: Fill each avocado cavity with the egg then place in the air fryer basket and cook for 4-5 minutes or until the egg looks set (the egg yolk will still be runny).
- Serve: Sprinkle with salt and pepper then top with feta cheese, bacon and green onions. Serve immediately and enjoy!
Tips for Success
- Before adding the eggs to the avocado halves, check to see if they can both sit straight in the air fryer. You don’t want the eggs to spill out! If they don’t sit straight but want to tip over, then create small foil boats to put the avocado in and hold it steady.
- You can either crack the egg directly into the avocado, which might cause a little bit of spillage, or you can crack the egg into a bowl and spoon the egg and some of the egg white gently into the cavity in the avocado! Both will work!
- Make it spicy! Add a sprinkle of red pepper flakes on top before serving, or serve with your favorite hot sauce or salsa!
- Serve with toast! I love to serve these with some sourdough or whole grain toast and use a knife to spread the runny egg and avocado on the toast! So delicious.

Can I bake these eggs in avocado in the oven?
Definitely! If you don’t have an air fryer, you can bake these in the oven at 425 degrees for about 15 minutes, but keep an eye on the egg whites and take out when they are set!
Can I store baked egg in avocado?
It is best to eat these avocado baked eggs on the same day that you make them. Otherwise, the avocado will oxidize and turn brown! So only make the amount of avocado eggs that you are going to eat.
