Before You Get Started
- Use leftover chicken. Rotisserie chicken is a huge time saver, and it works great in this recipe! Just shred and mix it in with the other ingredients!
- Make it ahead. Assemble the peppers up to a day in advance, store them in the fridge, and pop them in the oven when you’re ready to eat.
- Change out the cheese. Swap the cheddar for mozzarella, pepper jack, or blue cheese for a different flavor.
Ingredients
- Buffalo Sauce – Adds a bold, tangy heat that’s key for buffalo chicken recipes. Drizzle it on top of the peppers at the end for a bit of extra flavor and heat!
- Cream Cheese – Adds creaminess and binds the filling together.
- Shredded Chicken – A hearty protein that soaks up all the flavor! I love using rotisserie chicken to save time.
- Sour Cream – Balances the heat of the buffalo sauce with a cool, tangy flavor.
- Bell Peppers – The perfect sweet and crunchy veggie for stuffing with buffalo chicken.
- Seasonings – Garlic powder, onion powder, and dried dill.
- Sharp Cheddar Cheese – Melted on top to create an ooey, gooey topping.
- Green Onions – Adds a fresh, mild onion flavor and a pop of color.
