If you ever have a craving for raspberry cheesecake but need something easy to make and a lot healthier, this raspberry chia pudding is a wonderful option. Packed with fruity, creamy flavor, this berry chia pudding recipe is so delicious, you wouldn’t even suspect that it is healthy!
Chia seeds are actually so impressive, because they will thicken up the liquid in this recipe naturally and create a lovely texture, almost like tapioca pudding. I love to add fresh raspberries into mine, but this recipe is versatile and can be used with almost any fruit you have on hand!
I have found myself craving this pudding quite frequently, so I like to make a large batch in a few different jars and keep them on hand to eat throughout the week. If you want to make more than one serving, simply double or triple the recipe!
Ingredients Needed
- Raspberries: Fresh raspberries provide the perfectly fruity taste here!
- Greek Yogurt: Greek yogurt adds a creamy texture and extra protein.
- Honey: To naturally sweeten this chia pudding, I added honey. You can use agave syrup of maple syrup instead!
- Milk: Use any milk you prefer. Plant-based milk would also work well!
- Vanilla: For added flavor.
- Chia Seeds: The chia seeds will thicken up the liquid here to create the perfect pudding-like texture. They are also high in fiber!
- Coconut Flakes: If you want, you can garnish the pudding with coconut flakes!
How to Make Raspberry Chia Pudding
- Combine Ingredients: Add the raspberries to a jar or cup. Mash them with a muddler or the back of a spoon. Next, add in the Greek yogurt, honey, milk, and vanilla. Mix to combine.
- Add Chia Seeds & Chill: Sprinkle in the chia seeds and give another stir. Place in the refrigerator for 1 hour or overnight.
- Serve: Serve the chia pudding with more raspberries on top for garnish and optional coconut flakes! Enjoy!
Tips for Success
- Adjust the consistency to your liking! If the pudding is too thick, add a little more milk and stir well. If it’s too thin, add a bit more chia seeds and let it sit until it reaches your desired consistency.
