BEFORE YOU GET STARTED/KELLEY’S TIPS

  • Thaw the puff pastry. Make sure you plan ahead and give the puff pastry time to thaw. You can either thaw in the fridge overnight or on the counter for about 30 minutes to ensure it’s easy to work with but still cold.
  • Cook the bacon in the oven. While preparing the eggs and puff pastry, cook the bacon in the preheated oven. Lay the pieces on a baking sheet lined with parchment paper and bake for 10-20 minutes, until it has reached the desired level of crispiness.
  • Don’t overcook the eggs. Slightly undercook the scrambled eggs since they’ll finish cooking in the oven.

    ingredients needed

    • Puff pastry: The star of the dish, puff pastry, creates a buttery, flaky base that crisps up beautifully in the oven. I recommend thawing it out in the fridge overnight.
    • Bacon: Cooked to crispy perfection, crumbled bacon adds a smoky, salty flavor and the perfect crunch to each bite.
    • Butter: A touch of butter makes the scrambled eggs extra creamy and rich.
    • Eggs: The heart of this breakfast classic, eggs provide a soft, fluffy texture and pair perfectly with the other ingredients.
    • Heavy Cream: Just a splash of cream makes the eggs extra velvety and luxurious.
    • Sharp Cheddar Cheese: Adds a bold, tangy bite that complements the eggs and bacon perfectly. You can also use mozzarella, gouda, or pepper jack if you want to switch things up.
    • Everything Bagel Seasoning: A savory finishing touch with sesame, poppy seeds, garlic, and onion that adds a burst of flavor.

how to make bacon egg and cheese pastries

    • Preheat: Preheat oven to 400 degrees. Allow your puff pastry to come to room temperature while your preparing the rest of the ingredients.
    • Whisk the eggs: Add eggs and cream to a small bowl. Whisk to combine then sprinkle with salt and pepper.
    • Cook the eggs: Heat butter in a medium skillet and once melted add in the eggs. Cook over medium heat and scramble the eggs. It’s ok for them to be softer / runnier. They will continue to cook in the oven. Remove the eggs from the heat and set aside.

    frequently asked questions

Can I make these pastries ahead of time?

Yes! You can assemble the pastries the night before, refrigerate them, and bake fresh in the morning. Alternatively, bake them completely, store in an airtight container, and reheat in the oven at 350°F until warm.

    Can I freeze the pastries?

Absolutely! After baking and cooling, freeze the pastries in a single layer on a baking sheet, then transfer to a freezer bag. Reheat directly from frozen in a 375°F oven for about 15–20 minutes.

What if I don’t have everything bagel seasoning?

You can leave it out or sprinkle the pastries with sesame seeds, poppy seeds, and a pinch of garlic and onion powder for a similar flavor.

What can I serve with the pastries?

Pair them with fresh fruit, a simple salad, or even a side of roasted potatoes for a complete meal!
