- Thaw the puff pastry. Make sure you plan ahead and give the puff pastry time to thaw. You can either thaw in the fridge overnight or on the counter for about 30 minutes to ensure it’s easy to work with but still cold.
- Cook the bacon in the oven. While preparing the eggs and puff pastry, cook the bacon in the preheated oven. Lay the pieces on a baking sheet lined with parchment paper and bake for 10-20 minutes, until it has reached the desired level of crispiness.
- Don’t overcook the eggs. Slightly undercook the scrambled eggs since they’ll finish cooking in the oven.

- Cook the eggs: Heat butter in a medium skillet and once melted add in the eggs. Cook over medium heat and scramble the eggs. It’s ok for them to be softer / runnier. They will continue to cook in the oven. Remove the eggs from the heat and set aside.

- Fill the pastries: Add 1 egg to a bowl and whisk to combine. (This is your egg wash) Fold over one of the sides of puff pastry and brush with the egg wash. Fold the opposite side and place on top to create a bundle.
