Kelley’s Tips
Before You Get Started
- Dice Veggies Uniformly. Cutting onions, peppers, celery, and carrots into similar sizes ensures even cooking and balanced flavor.
- Swap the Ground Beef. You can use lean ground turkey or ground chicken, if preferred.
- Simmer the Sauce. Allow the ketchup, mustard, molasses, and seasonings to simmer for a few minutes so the flavors meld and the sauce thickens.
- Make it Meal-Prep Friendly. Store components separately (sweet potatoes, meat, and coleslaw) to keep textures fresh all week.

Sloppy Joe Bowl Ingredients
- Ground Beef – Provides hearty, savory protein that’s the base of the Sloppy Joe filling.
- Veggies – The combination of onion, red bell pepper, celery and carrots adds natural sweetness, texture, and flavor depth to the filling.
- Sauce & Seasonings – This recipe uses ketchup, mustard, molasses, apple cider, apple cider vinegar, Worcestershire sauce, thyme, oregano, salt, and pepper for a balanced mix of sweet, tangy, and savory flavors that creates the signature Sloppy Joe taste.
- Easy Roasted Sweet Potatoes – Roasted for a tender, slightly crisp base that pairs perfectly with the rich Sloppy Joe filling.
- Homemade Coleslaw Recipe – Fresh, tangy, and creamy, this adds crunch and balances the richness of the meat and sweet potatoes. The coleslaw is made with shredded cabbage, carrot, and fresh parsley, while the dressing is a simple combination of Greek yogurt, raw honey, apple cider vinegar, and a pinch of salt and pepper for light, refreshing flavor.
How to Make Healthy Sloppy Joe Bowls
- Sauté Veggies and Brown Beef: Heat oil in a large skillet over medium high heat. Once hot add in onions, bell peppers, carrots and celery and sauté for 4-5 minutes, or until softened and beginning to caramelize. Add in beef, and cook until browned.
- Add Flavorings and Simmer: Season with salt and pepper, then stir in ketchup, mustard, molasses, apple cider, apple cider vinegar, Worcestershire sauce, thyme, and oregano. Simmer for 5 minutes until thickened, then set aside until ready to assemble.

- Season Sweet Potatoes: Preheat oven to 425°F. Add sweet potatoes, olive oil, salt, pepper, onion powder, garlic powder, and paprika to a medium bowl and toss to combine.

- Roast: Spread onto a sheet pan and roast in the oven for 15 to 20 minutes or until crispy and tender in the middle.

- Make the Coleslaw: Add cabbage, carrot, and parsley to a large bowl. In a small bowl, whisk together Greek yogurt, honey, apple cider vinegar, salt, and pepper, then pour over the veggies and toss.
- Assemble: To serve, divide the Sloppy Joe mixture between bowls or meal prep containers and top with roasted sweet potatoes and coleslaw. Perfect for lunch, dinner, or meal prep!
