How to Make Healthy Sloppy Joe Bowls

  1. Sauté Veggies and Brown Beef: Heat oil in a large skillet over medium high heat. Once hot add in onions, bell peppers, carrots and celery and sauté for 4-5 minutes, or until softened and beginning to caramelize. Add in beef, and cook until browned.
  2. Add Flavorings and Simmer: Season with salt and pepper, then stir in ketchup, mustard, molasses, apple cider, apple cider vinegar, Worcestershire sauce, thyme, and oregano. Simmer for 5 minutes until thickened, then set aside until ready to assemble.
  1. Season Sweet Potatoes: Preheat oven to 425°F. Add sweet potatoes, olive oil, salt, pepper, onion powder, garlic powder, and paprika to a medium bowl and toss to combine.
  1. Roast: Spread onto a sheet pan and roast in the oven for 15 to 20 minutes or until crispy and tender in the middle.
  1. Make the Coleslaw: Add cabbage, carrot, and parsley to a large bowl. In a small bowl, whisk together Greek yogurt, honey, apple cider vinegar, salt, and pepper, then pour over the veggies and toss.

    Sloppy Joe

    • 2 tbsp avocado oil
    • 1 medium onion, diced
    • 1 medium red bell pepper, diced
    • 1 rib celery, diced
    • 2 medium carrots, diced
    • 1 lb ground beef
    • 1 tsp kosher salt
    • 1/2 tsp pepper
    • 1/4 cup ketchup
    • 2 tbsp mustard
    • 2 tbsp molasses
    • 1/2 cup apple cider
    • 2 tbsp apple cider vinegar
    • 1 tbsp Worcestershire sauce
    • 1 tbsp fresh thyme
    • 2 tbsp fresh oregano, chopped

    Air Fryer Sweet Potato

    • 4 sweet potatoes, peeled and diced
    • 2 tbsp avocado oil
    • 1 tsp kosher salt
    • 1/2 tsp pepper
    • 1/2 tsp paprika

    Greek Yogurt And Raw Honey Coleslaw

    • 1 small head cabbage, shredded
    • 1 medium carrot, grated
    • 1 cup fresh parsley, chopped
    • 1/2 cup full fat greek yogurt
    • 1 tbsp raw honey
    • 3/4 tsp kosher salt
    • 1/4 tsp pepper
    • 1 tbsp apple cider vinegar

    Instructions

    Sloppy Joe

    • Heat oil in a large skillet over medium high heat.
      Once hot add in onions, bell peppers, carrots and celery and sauté for 4-5 minutes, or until softened and beginning to caramelize.
      Add in beef, and cook until browned.
    • Season with salt, and pepper. Add in ketchup, mustard, molasses, apple cider vinegar, apple cider, Worcestershire sauce, fresh thyme, and oregano.
      Allow to simmer for 5 minutes or until the mixture is thickened and heated through. Set aside until you are ready to assemble your bowls.

    Roasted Sweet Potatoes

    • Preheat oven to 425°F.
      Add sweet potatoes, olive oil, salt, pepper, onion powder, garlic powder, and paprika to a medium bowl and toss to combine.
      Spread onto a sheet pan and roast in the oven for 15 to 20 minutes or until crispy and tender in the middle.

    Healthy Coleslaw

    • Add grated cabbage, carrot and parsley to a large bowl, set aside.
    • In a small bowl whisk together greek yogurt, honey, apple cider vinegar, salt, and pepper.
    • Pour the dressing on top of the cabbage mixture and toss to combine. Set aside until you are ready to assemble.

    Assembly

    • To serve divide the sloppy joe's between bowls (or meal prep containers) and serve with sweet potatoes and coleslaw! This is perfect for meal prep or for dinner or lunch. Enjoy!

    Notes

    Use oven / air fryer mode: If your oven has the option cook them on air fryer for 15-20 minutes to ensure a super crispy potato!
    Cut sweet potatoes into smaller uniform chunks to help them crisp up faster and cook evenly.
    To save on time you can use pre-shredded coleslaw mix instead of shredding your own cabbage and carrot.
    Swap the ground beef with lean ground turkey or ground chicken, if preferred.
