Easy Watermelon Feta Salad

Watermelon is one of my favorite parts of summertime. It’s cold, juicy, refreshing, and sweet — perfect for hot weather!

At first, this salad might seem like a weird combo. (Watermelon and feta? Really?) But trust me; these two go together perfectly. The tangy, salty feta and sweet, juicy watermelon are a match made in heaven!

I loaded this Watermelon Feta Salad with tons of fresh fruits and basil. I used mixed greens as the base for the salad. Arugula or spinach would also be great in this.

This salad makes an awesome lunch or light dinner. Serve with grilled chicken for some added protein and a more filling meal!

The BEST (and Simplest) Balsamic Vinaigrette

As for the dressing for this Watermelon Feta Salad recipe, I choose my simple 3 Ingredient Balsamic Vinaigrette. Made with just balsamic vinegar, oil, and brown sugar. That’s it! It’s easy to make, tart, and slightly sweet. I like to store the extra in the fridge to use throughout the week. Just give it a good mix or shake before serving.

Key Ingredients

  • Spring Mix: You’ll need 4 cups total for two servings of this Watermelon Feta Salad. You can swap for spinach and arugula, romaine, leafy green lettuce, or a combination of greens.
  • Watermelon: Just half of a cup, cubed into bite-sized pieces. But go ahead and cut up more to use for salads later or to enjoy as a snack!
  • Mixed Berries: I like using blueberries, raspberries, and blackberries, but strawberries and kiwi would also be delicious!
  • Feta: Either pre-crumbled or crumbled from a block.
  • Basil: You’ll need a handful to yield 3 tablespoons chopped. Mint would also be delicious!
  • Easy 3-Ingredient Balsamic Vinaigrette: Two tablespoons balsamic vinegar, 1 teaspoon brown sugar, and ¼ cup canola oil or avocado oil combined and set aside until time to serve.

How To Make Balsamic Vinaigrette

Combine the balsamic vinegar and brown sugar in a small bowl or mason jar. Then, in a slow steady stream, whisk in the oil until combined and thickened. Set aside until ready to serve with the salad. If oil and vinegar separate, whisk again or shake before serving.

How To Make Watermelon Feta Salad

Fill two individual salad bowls with the mixed greens, then top with watermelon, berries, feta, and basil. Drizzle with the Balsamic Vinaigrette, lightly toss, and serve immediately!

Variations

  • Add some protein like grilled chicken, sliced turkey breast, or canned tuna to make this a more filling meal!
  • Change up the greens! Romaine, leafy greens, or kale would also work well here. Mint would also be a great addition!
  • Add more fruit! Strawberries, halved cherry tomatoes, or sliced peaches would be great with this salad.
  • Add some nuts! Walnuts, pecans, sliced almonds, or pistachios would be delicious.

Storage Instructions

This Watermelon Feta Salad is best enjoyed freshly made the day of, but you can prep the ingredients to assemble and enjoy later. Just store separately in the fridge.

Watermelon Feta Salad

  • 4 cups spring mix
  • 1/2 cup watermelon cubed
  • 1/2 cup mixed berries I used blueberries, raspberries and blackberries
  • 3 tablespoons feta crumbled
  • 3 tablespoons basil chopped

Easy 3 Ingredient Balsamic Vinaigrette

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon brown sugar
  • ¼ cup canola oil
