    The Best Blueberry Energy Balls

    These blueberry energy balls are a serious lifesaver! They are convenient, tasty and filling, so I always reach for them when I need a healthy snack! Energy balls are a no-bake snack or dessert that take just about 10 minutes to throw together. Plus, they are made with only 6 ingredients!

    You may have heard these referred to as energy bites or protein bites, too. No matter what you prefer to call them, these easy blueberry energy balls are a satisfying and delicious snack I keep making again and again!

    These are especially good for blueberry lovers, since they have a strong blueberry flavor along with the beautiful blue color! I have a ton of different energy bites recipes, but these are a little bit different since I didn’t add oats. These are purely made with fruits, dates and nuts with a little lemon and vanilla added for extra flavor. So they are super healthy!

    Ingredients Needed

    • Cashews: I love using cashews here, since the creamy flavor goes well with the blueberries! But you can use any type of nuts including peanuts, walnuts or pecans!
    • Almonds: Almonds add a lovely flavor and an extra dose of fiber!
    • Dried Blueberries: You need dried blueberries to make blueberry energy balls. I have made other variations with different dried fruit, like date energy balls or cranberry energy balls if you want to try making energy bites with different fruits!
    • Lemon Zest: Lemon and blueberries create a wonderful combination of flavor! After you zest a lemon, store it in the fridge to use for later.
    • Dates: Are used to sweeten the energy balls!
    • Vanilla: For added depth of flavor!

    How to Make blueberry energy balls

    1. Combine Ingredients: Add all of the ingredients to a food processor with the blade attachment.
    2. Blend: Pulse for 30-60 seconds or until everything is combined.
    1. Roll: Roll into balls (I got about 12!). Serve immediately or store in the fridge for up to 1 week!

    Expert Tips

    • Add additional ingredients! You can feel free to add different ingredients to these blueberry lemon energy balls. Things like shredded coconut, chocolate chips, or even some nut butter would be good here. If you add coconut or chocolate chips, add them after blending!
    • If you like your energy balls extra sweet, you can add a dash of maple syrup to the mix! Keep in mind that dried blueberries are already pretty sweet, so taste the mixture before adding extra sweeteners like maple syrup or honey.
    • If the mixture is too crumbly to stick together, try adding just a little bit (about 1 teaspoon to start) of water and pulse in the food processor. The dough should become stickier and more easy to roll into balls!

    How Do I store blueberry energy balls

    You can choose to store these in the refrigerator or the freezer! In the fridge, blueberry energy bites last up to 1 week. If you opt for the freezer, they can keep for up to 3 months! This is a great option if you make a large batch and want to take them out as you are ready to eat them.
