Tater Tot Breakfast Casserole
When I decide to make this tater tot breakfast bake, my whole family gets excited! It’s just THAT good! I don’t know if it’s the kid-approved tater tots, the mouthwatering cheese, or the delicious breakfast sausage, but this easy one-pan casserole is always a huge hit with the whole family. Plus it makes a great make ahead breakfast for Christmas morning!
The best part about this recipe is how simple it is. Line the bottom of your baking dish with tater tots, whisk together your ingredients, pour into the casserole dish, and bake! There’s really only about 10-15 minutes of active cooking time (if that!), and then you can allow your breakfast to cook while you enjoy your morning coffee.
To save even more time, you can always prep it ahead of time, then, depending on when you want to cook, either refrigerate or freeze! There have been many mornings where I’ve simply pulled my pre-made tater tot breakfast casserole out of the fridge, then popped it into the oven while I was getting ready. Delicious, warm breakfast in half the time.
Ingredients
- Tater tots: Grab a bag of your favorite frozen tots from the grocery store! I ended up using about 35 frozen tater tots for this recipe, but you really just need enough to line the bottom of your baking dish.
- Veggies: I included diced onion, red bell pepper, and cooked spinach for extra flavor and nutrients. You can always add more of your favorites, like broccoli or even jalapeños for a spicy kick.
- Sausage: I added cooked sausage to the recipe, but you can easily substitute bacon, turkey sausage, chorizo, or even a vegetarian protein option.
- Eggs: Is it really breakfast without the eggs? Depending on how much you want to make, you’ll want to add more or less eggs. For my recipe, I used 6 total large eggs (but I was definitely looking forward to those leftovers).
- Dairy: You’ll need your favorite shredded cheese and half a cup of milk for this breakfast casserole. I used sharp cheddar cheese, but you can definitely change it up!
How to Make a Tater Tot Breakfast Casserole
- Prep: First, preheat your oven to 375 degrees F and then grease a 9×9 pan with nonstick cooking spray. While the oven is preheating, go ahead and layer the tater tots in an even, single layer at the bottom of your pan.
- Combine ingredients: Next, grab a large bowl and combine the onions ell pepper, sausage, spinach, cheese, eggs, and milk inside. Whisk well until the ingredients are fully combined.
- Then it’s time to pour the egg mixture on top of the tater tots and sprinkle with the remaining cheese.
- Finally, bake your tater tot breakfast casserole for 45-50 minutes.
- Cool and serve: Allow your casserole to cool for 5-10 minutes in the pan before slicing and serving!
Tips for Making the Perfect Tater Tot Breakfast Casserole
- Top with avocado: My favorite way to serve this breakfast casserole is with hot sauce, everything seasoning and sliced avocado on top!
- Turn up the heat: I love to drizzle Sriracha on each slice of breakfast casserole before serving, but if you’re looking for more spice, you can add hot sauce into the egg mixture before baking or even throw in a few diced jalapeños.
- Make it vegetarian: This tater tot breakfast bake is just as delicious sans sausage. Add more veggies or substitute with your favorite vegan option.
- Add all the cheese: There’s no reason you have to stick with just one type of cheese in this recipe. If you’re really wanting to embrace the melty, cheesy breakfast casserole, try combining two or three different types of cheese and layering it between the tots and egg mixture, THEN on top, too!
- Make ahead: Sometimes, I know I want to have a tasty breakfast but I also know I’m not going to want to MAKE that tasty breakfast — a conundrum, I know. When I’m fortunate enough to have that foresight, I like to throw together this casserole in the evening, refrigerate, then pop it into the oven in the morning! Perfect lazy breakfast with minimal effort.
Storage Instructions
This tater tot breakfast casserole actually makes delicious leftovers! You can store any of those leftovers in an airtight container for up to 5 days in the refrigerator. Then, when you’re craving an afternoon snack or a quick work-from-home lunch, you can pop it into the microwave or oven to reheat.

This is a fantastic and versatile breakfast recipe!!! I have made this several times and wanted to share my appreciation. It’s a perfect size for a couple versus most of the casseroles are in a 9 x 13 dish. This recipe is less greasy than most others, and you can switch it up with various proteins – sausage, diced ham, cooked bacon, even Italian sausage! I use fresh chopped spinach and do a 3 to 1 ratio, sauté 3 c. fresh in a skillet for a few minutes and it’s ready to toss in. A twist to try – substitute sweet potato tots, oh man!!! So good, try Alexia tots and they fit perfectly and give a sweet flavor. Thanks so much Kelley!
