Ingredients
This Coconut Pecan Chocolate Chip Granola recipe is ridiculously simple to make — you only 5 ingredients and 5 minutes of prep time! It’s loaded with shredded coconut, coconut oil, honey, pecans and chocolate chips. It has tons of coconut flavor and big clusters with the perfect amount of sweetness.
How To Make Coconut Pecan Chocolate Chip Granola
- Start by melting the coconut oil and honey in the microwave for 15-30 seconds.
- Toss with the rest of the ingredients, and place on a baking sheet lined with a silicone baking mat or parchment paper.
- Bake for 30 minutes or until golden brown, and allow the granola to cool. (The granola with get crunchier as it cools. It tends to be sort of soft when it first comes out of the oven.)
- Toss cooled granola with chocolate chips.

- Some cold milk
- Greek yogurt
- Chopped fruit
- Fresh berries
- Whipped cream

Coconut Pecan Chocolate Chip Granola
Ingredients
- 1/4 cup coconut oil
- 1/4 cup plus 2 tablespoons honey
- 2 cups old fashioned oats
- 1/2 cup shredded unsweetened coconut
- 1/2 cup pecans, chopped
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 325 degrees.Add coconut oil and honey to a microwave safe bowl. Place in the microwave for 15-30 seconds to slightly melt the honey and coconut oil.
- Add the melted honey and coconut oil to a large bowl with the oats, coconut and pecans. Toss to coat.
- Place on a baking sheet lined with a silicone baking mat or parchment paper.
- Bake for 30 minutes stirring halfway through or until golden brown and allow the granola to cool. The granola with get crunchier as it cools it tends to be sort of soft when it first comes out of the oven.Toss cooled granola with chocolate chips and enjoy.
- Store in an airtight container at room temperature for up to a week or freeze for up to 2 months.

I make this recipe constantly. I love how insanely easy it is but don’t love how quickly my family gobbles it up. :o) Silly question but I am planning to make this for a gluten free pot luck – if I use gluten free oats, will it still turn out as delicious? Thanks!

I am so glad you enjoy this granola!! It is hard to say for sure how the gluten free oats will do in this recipe because I personally have not tried it. I think they will be a good substitute though and should work.

Can this be made, making it soft instead of crunchy. I don’t really really care for hard granola.

I would try not too cook this as long. You can also add a bit more coconut oil to make it softer.

It is hard to say because I have never made it with sweetened coconut before. I would try adding around 3-4 tablespoons of honey (which is about half of the amount called for). I would start there and taste. If you need it to stick a little more add some more coconut oil.

Just made this and can’t wait for it to cool. Just thought I would add after reading some of the comments that oats are gluten free but often get contaminated with gluten in the processing. Oats labeled gluten free are just certified that they are processed in a gluten free facility. 🙂

This was the first time I’ve made granola and it was soo good I could’ve eaten the whole batch in 1 sitting!!
Question, is it possible to make this granola into a bar? Would i just press it into a small pan to cool when I take it out of the oven?

I am so glad you enjoyed this granola! I have not tried making a granola recipe into granola bars before so it is hard to say for sure. I would imagine you might need to add more honey to make it stay together? And I would try putting it in a 8 x 8 or 9 x 9 pan.

Is the coconut oil measured in liquid or solid? 1/4 of solid coconut oil isn’t the same as measuring it in its liquid form, so I just want to be sure I’m using the right form.

I measure it out in a dry measuring cup. (I keep my coconut oil in the pantry and it’s typically pretty hard.)

I’ve made this several different ways and this by far the is the very best. All my favorite things together…pecans, oats, coconut, chocolate chips, honey and coconut oil!! I doubled this recipe to make sure it would last a little while. I wished I knew how to figure out the calorie count in this. I’m only eating a 1/4 cup a day b/c I think it’s going to be really high in calories. Trying to eat healthier and lose some weight. I’m glad I found this pin.
