Garlic Butter Steak Bites and Potatoes is the best one skillet meal! Everything is cooked in one pan making for easy clean-up! I start by cooking the potatoes first over medium heat until they are golden brown on the outside and fluffy and tender on the inside. Then I sear the steak in batches to keep it juicy and caramelized.
The trick to making the steak bites is a super hot pan. The steak bites only cook for 1-2 minutes at most on each side. I like mine to still be a bit pink on the inside. They will also continue to cook as they cool. I also cook the steak in two batches. This allows the steak to get crispier and develop that golden crust on the outside.

What you’ll need for this recipe
- Steak: New York Strip steak is the best cut of meat for steak bites. You can also use sirloin or flank steak.
- Seasoning: Garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper add so much amazing flavor!
- Olive oil: Olive oil is added to the pan to fry the potatoes and steak. You can substitute it for any oil you have on hand.
- Butter: I use unsalted butter as the steak is already seasoned with salt. If you only have salted butter, use half the amount of salt on the steak.
- Potatoes: White Idaho potatoes are scrubbed and cut into wedges. Any kind of potato would be great for this recipe: red skin or even sweet potato!
- Garnish: Finally, I like to add a little parsley for serving. It adds a delicious pop of freshness!
How do you make Garlic Butter Steak Bites and Potatoes?
- Season: Combine all the seasoning in a small bowl. The steak and potato wedges are seasoned with salt, pepper, paprika, garlic powder, onion powder, and Italian seasoning. Season the steak and potatoes with the seasoning.
- Cook the potatoes: Heat oil in a large skillet. Add potatoes and cook on medium heat until golden brown and tender on the inside. If the potatoes start getting too brown turn down the heat or add a bit more oil to the pan. Once the potatoes are fully cooked remove them from the pan and set them aside.
- Cook the steak bites: To the same skillet heat 1 1/2 tablespoons butter over medium-high heat. Once the pan is really hot add half of the steak and cook for 1-2 minutes on each side. (If the steak is getting too brown turn down the heat some) Remove the steak bites from the skillet and place them on the plate with the potatoes and set aside. Cook the remaining steak with the remaining 1 1/2 tablespoons of butter.
- Serve immediately with your favorite dipping sauces if desired and a sprinkle of parsley.
Tips for Success
- Once you’ve finished cooking the steak bites, allow the meat to rest for 5 minutes.
- Store leftover steak bites and potatoes in an airtight container for up to 4 days.
- Reheat in a pan on the stove until heated through, or reheat the bites in the oven until they reach 100-110°F internally.
- Leftover steak bites are also delicious in a Steak Salad!

Yes, you can! I find the best way to reheat steak bites is to sauté them in a pan on the stove for just a few minutes until warmed through. You can also reheat them in the oven, in a single layer on a wire rack. Make sure the internal temperature reaches between 100-110°F.

Ingredients
- 1 pound strip steak cut into Bites
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon pepper or to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 medium russet potatoes, scrubbed and cut into wedges
- parsley for serving, if desired
Instructions
- Combine all the seasoning in a small bowl. Season the steak and potatoes with the seasoning.
