This Overnight French Toast Casserole is the perfect make-ahead breakfast for busy mornings or when you have company over. It’s super easy to prep the night before and makes a great breakfast for the holidays! All you need is 20 minutes of prep time to make this dish and it can be made a day or two in advance.
This french toast casserole is loaded with fresh blueberries, cream cheese, and cubed bread. It’s tossed in a rich custard made of eggs, milk, vanilla, and maple syrup. I made my french toast casserole with challah bread because that is what I had on hand. You could also use brioche or french bread. I first cube the bread then toss it with the cubed cream cheese and fresh blueberries in a buttered baking dish. Next, I whisk the milk, eggs, maple syrup, sugar, and vanilla extract.
Maple syrup is used to sweeten up the french toast casserole. It gives the blueberry french toast bake the perfect amount of sweetness with a hint of maple syrup.
While the french toast is baking I make the blueberry sauce. It’s super easy to make and is so delicious! All you need is four ingredients! Fresh blueberries, water, cornstarch, and sugar are simmered until thickened. I serve the blueberry sauce on the side for serving.

Ingredients
- Challah Bread: You can also use brioche, croissants, or french bread. Just make sure to use day-old bread. You can also leave the bread out on the counter overnight to dry up and harden.
- Cream Cheese: This adds a creamy, tangy richness that reminds me of cheesecake. Cheesecake for breakfast?! Yes!
- Blueberries: I prefer fresh blueberries for this recipe, however, you can use frozen too! They will take a little longer to cook than fresh but will still taste amazing.
- Eggs: French toast is also known as “eggy bread” because the bread is dipped in egg before frying. This time it gets poured over the bread before baking.
- Milk: Milk gets whisked with the egg mixture. You can use any milk of your choice.
- Cinnamon & vanilla: These two ingredients add warmth, spice, and enhance the sweetness of the Blueberry French Toast Casserole recipe.
- Maple Syrup: French toast and maple syrup are made for each other! Opt for real Grade A maple syrup when you can.
- Granulated Sugar: Sugar sweetens the blueberry sauce. It’s delicious!
- Cornstarch: This ingredient thickens the sauce so that it isn’t too runny.
How to make Overnight Blueberry French Toast Bake
- Make the french toast bake: Add the cubed bread, cream cheese and blueberries to the pan and toss to combine. In a large bowl, mix the eggs, milk, cinnamon, vanilla extract, and syrup. Pour over the bread.
- Refrigerate overnight: Cover and refrigerate overnight.
- Preheat oven: When you are ready to eat remove it from the refrigerator while the oven is preheating. To 350 degrees. Grease a 9×13 inch baking dish with butter or nonstick cooking spray.
- Bake: Cover and bake for 30 minutes. Uncover and continue baking for 30 minutes, until golden brown and the center is no longer giggly.
- Make the blueberry sauce: Add sugar, cornstarch, and water to a medium saucepan. Bring to a boil and whisk constantly for 4 minutes. Add in the blueberries, reduce heat and simmer until the blueberries burst and the sauce is thickened, 8-10 minutes.
- Serve: Immediately with the blueberry sauce on the side or drizzled on top. I like to sprinkle powdered sugar on top as well! You can also serve more warm maple syrup on the side for drizzling.

- 8 ounces cream cheese, cut into cubes

- 2 cups milk, I used 2%
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1/3 cup maple syrup

- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 cup fresh blueberries
