before you get started

  • Soften the cream cheese! Let the cream cheese come to room temperature before starting – this prevents lumps and creates a silky smooth base for the buffalo chicken dip.
  • Don’t skip the broiling step – it creates that gorgeous golden top that makes the buffalo chicken dip extra appetizing! Keep an eye on it though – it can go from perfect to burnt quickly under the broiler.
  • To make a vegetarian buffalo dip, simply omit the shredded chicken. It will still have a lovely creamy, spicy flavor that everyone can enjoy!

    Ingredients Needed

    • Cream Cheese: Use full-fat block cream cheese at room temperature for the smoothest texture and best flavor!
    • Chicken Broth: Adds a savory depth and extra moisture for a super creamy dip.
    • Shredded Chicken: Rotisserie chicken works great, or prep some easy Instant Pot shredded chicken!
    • Blue Cheese Crumbles: Opt for a medium-strength blue cheese that won’t be too overwhelming.
    • Buffalo Sauce: Frank’s RedHot Buffalo Sauce is the classic choice, but any buffalo-style hot sauce works!
    • Cheddar Cheese: Sharp cheddar adds the best flavor! I recommend shredding it freshly from a block of cheese if possible. It has the best, melty texture!

How to Make Buffalo Chicken Dip

    1. Melt the Cream Cheese: Add chicken broth and cream cheese to a medium saucepan and cook over medium high heat. Stir to melt the cream cheese. (I start out with a spoon then transfer to a whisk to remove any clumps.)
