Kelley’s Tips
Kelley’s Tips For Extra Crispy Baked Chicken Wings
- Dry them well. Pat the wings very dry with paper towels. Less moisture means crispier skin.
- Don’t skip the baking powder. This is the trick to that crispy, golden skin without frying. Be sure to use aluminum free baking powder.
- Use a wire rack. Elevating the wings allows hot air to circulate around them so they crisp on all sides.
- Give them space. Arrange the wings in a single layer without touching. Overcrowding can cause them to steam.
- Flip as they bake. Turn the wings about every 20 minutes so both sides get nice and crisp.
- Add sauce last. Toss the wings with sauce after baking. To keep them hot, pop them back in the oven for a few minutes, or warm the sauce in a saucepan before tossing.

Ingredients You’ll Need
- Chicken wings: Use split wings with the flats and drumettes separated. Pat them very dry before seasoning for the crispiest results.
- Baking powder: The secret to extra crispy skin without frying!
- Salt + pepper: Simple seasonings that bring out the flavor of the chicken.
- Garlic powder: Adds a savory garlic flavor without the risk of fresh garlic burning in the oven.
- Onion powder: Adds another layer of savory flavor and pairs perfectly with the garlic.
How to Make Crispy Chicken Wings in the Oven
- Preheat & Prep: Preheat oven to 425ºF. Line a baking sheet with a slip mat or aluminum foil. Top with a wire rack and set aside. Pat the chicken wings off with a paper towel to ensure they are completely dry.

- Season the Chicken: Add the chicken wings to a medium bowl. Sprinkle with baking powder, salt, pepper, garlic powder, and onion powder. Toss to coat the chicken wings in the seasonings.
- Place on Rack & Bake: Place the chicken wings onto the prepared baking sheet and bake for 45 minutes, depending on the size of the chicken wings.

- Flip: Turn the chicken wings every 20 minutes to ensure they get crispy on both sides.

- Serve: Enjoy the wings hot with homemeade ranch dressing or blue cheese dressing for dipping. Or, toss them with your favorite wing sauce or my honey chipotle sauce for even more flavor!

I HATE these! I love chicken wings, but after trying this method twice, I am not a fan. The wings do come out crispy, but the baking powder leaves a chalky, very unpleasant mouth feel. I wanted to love them, but no

Hi Bernice,
I am so sorry to hear you didn’t enjoy these! This is our go to method for crispy baked chicken wings. The only thing that I can think of is could the baking powder have aluminum in it?
If it does that can REALLY affect the taste of the finished product and would leave it tasting chalky like you said.
Hope this helps,
Kelley
