I went a little lighter on the feta cheese and used fresh tomatoes, black olives, and chopped parsley for extra nutritional value and flavor. Plus, they’re vegetarian-friendly!

There are only 6 ingredients needed to make this easy appetizer:
- Frozen Phyllo Cups: This is the easiest and most convenient way to make this recipe. I recommend taking them out of the freezer about 10-15 minutes before you need to use them. These are much easier to handle than actual sheets of phyllo dough! One package comes with about 15 cups. You can easily double the recipe and use two packages of mini phyllo shells.
- Hummus: You can use store-bought or homemade hummus!
- Cherry Tomatoes: Dice them up for a burst of tangy flavor in each bite.
- Black olives: Diced or sliced black olives work best! You can also use kalamata olives if you prefer and extra salty option.
- Feta cheese: Crumbled to sprinkle on top!
- Fresh Parsley: Garnish with some fresh parsley if desired.
