Spicy Roasted Garlic Brussels Sprouts

Roasting is one of the best ways to cook Brussels sprouts. Caramelized and crispy on the outside and perfectly tender on the inside.  It’s hard for me to understand why people don’t like them. I enjoy them raw, shredded in a salad or roasted and tossed with lemon juice. People have a love hate relationship with Brussels sprouts and I happen to love them.

These spicy roasted garlic Brussels sprouts are spicy and loaded with tons of garlic. Coated in extra virgin olive oil and tossed with garlic, cayenne pepper and crushed red pepper flakes.

To achieve the caramelized outside the Brussels sprouts should be cooked at a fairly high temperature (375 degrees) for 20-25 minutes.

Ingredients for Spicy Roasted Garlic Brussels Sprouts

  • Brussels Sprouts: They are super easy to prep simply cut off the ends of the brussels sprouts and slice in half lengthwise.
  • Garlic: I love using fresh garlic in this recipe! It gets crispy and caramelized from roasting in the oven. I like to slice the garlic into thin strips.
  • Extra virgin olive oil: Any type of olive oil will work for roasting. Just make sure all the brussels sprouts are covered with a nice drizzle of olive oil. This ensures they will get golden brown and crisp.
  • Cayenne pepper: I add 1/4 teaspoon of cayenne for extra spice. Add more or less to taste.
  • Red pepper flakes: Are added for a little kick. If you don’t like too much spice omit the red pepper flakes.

How to make Spicy Roasted Garlic Brussels Sprouts

Begin by prepping your brussels sprouts and preheating the oven. Cut the ends off of the brussels sprouts and then cut them in half lengthwise. Next, preheat your oven to 375 degrees.

Next, we will add the seasonings and olive oil. Toss the Brussels sprouts with olive oil, garlic, cayenne pepper, crushed red pepper flakes, salt and pepper. A good coating of olive oil will help the outer leaves crisp up nicely in the oven.

Now it’s time to bake! Roast your brussels sprouts for 20-25 minutes. Once the brussels sprouts are fork tender with crispy edges, they are ready. Brussel sprouts in a black cast iron pan.

Tips for Success

  • If you want these spicy roasted garlic brussels sprouts to taste like they would at a restaurant, make sure you cook them long enough to get a nice caramelized and crunchy outside. Let’s be honest, the restaurants are probably frying their brussels sprouts, so these will be healthier and also super delicious!
  • Cook these in an even layer on a baking sheet. Make sure the brussels sprouts aren’t too overcrowded, or they will never crisp up. As they cook, they let off steam and if that steam is touching another brussels sprout, they will just come out looking like steamed veggies.
  • Switch up your toppings! Add some freshly grated parmesan cheese on top when they come out of the oven, or some crumbled feta. You can also drizzle a high quality balsamic vinegar over the top for added flavor!

Storage and Reheating Instructions

  • Store any left over brussels sprouts in an airtight container in the fridge for up to 4 days.
  • Reheat them in the oven or in an air fryer to crisp them back up! The microwave will work, but you won’t have super crispy brussels sprouts.

Frequently Asked Questions

  • Why won’t my brussels sprouts get crispy? If you are noticing that your brussels sprouts aren’t getting crispy, you might need to crank up your oven a little bit. These need to be roasted at a relatively high heat. You can up the oven to 400 F if you know your oven runs a little cold.
  • Do I have to cut my brussels sprouts in half before roasting? If you want them crispy, then yes. If you roast your brussels sprouts whole, they will cook too quickly on the outside and be raw on the inside. They are also less likely to crisp up on the outside since cutting them in half exposes the layers of leaves and the outer layers will get crispy.

  • 4 cups brussels sprouts halved
  • 4 garlic cloves sliced
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt

Instructions

  • Preheat oven to 375 degrees.
  • Add Brussels sprouts and garlic cloves to a baking sheet.
  • Drizzle with olive oil.
  • Season with red pepper flakes, cayenne, pepper and salt. Toss to combine.
  • Place in the oven and cook for 20-25 minutes until tender and caramelized. Toss once or twice throughout cooking.
  • Take out of the oven and serve immediately.
